Three Way- Muffins

Episode Three- 'Will's Fit & Full Kitchen'

 

 

Makes 1 Dozen | 10 minutes- prep time | 15 minutes- cooking time | 25 minutes- total time

 

 

What you need: 

 

Basic Muffin Batter

 

2 cups all-purpose flour

1 T baking powder

1/2 tsp. salt

¼ cup unsweetened apple sauce

1/2 cup granulated sugar

2 large eggs, room temperature

1 cup almond milk, room temperature

 

How to make it:

 

Preheat your oven to 350 degrees F. and place muffin liners into your muffin pan. Spray the muffin liners with non- stick cooking spray.

 

In a bowl combine the flour, salt, baking soda, and baking powder.

 

In a separate bowl, cream together the sugar, butter, egg, and milk.

 

Fold in the flour mixture slowly into the wet mixture.

 

Once everything is well combined, Pour the batter evenly into three separate bowls.

For the:

Orange and Sesame Seed Muffins, add 1 tablespoon Sesame Seeds, and the zest of 1 orange.

Cranberry & Almond Muffins, add 1/4 cup dried cranberries, and 1/4 cup slivered almonds.

Apple Pie Muffins, add 1 whole apple, chopped and 1 ½ teaspoon cinnamon sugar.

 

Now, scoop the muffin batter into the muffin liners. Fill each muffin liner with the batter until half full. 

 

Bake for 15 minutes.

 

Once finished baking, remove from the oven and allow the muffins to cool.
