Pumpkin Granola

Episode Two- 'Will's Fit & Full Kitchen'



Serves 5-8 People | 10 minutes- prep time | 30 minutes- cooking time | 40 minutes- total time


What you need:


3 cups rolled oats

½ cup pumpkin seeds

½ cup walnuts, chopped

1 tablespoon pumpkin spice

1 teaspoon ground cinnamon

1 tsp. Salt 

¼ cup honey or maple syrup

¾  cup pumpkin puree

3 tablespoons coconut oil


How to make it:


Preheat the oven to 400 Degrees F. Line a large baking tray with parchment paper or coat it with non- stick cooking spray. 


In a large mixing bowl, combine all of the ingredients together. Mix everything together until it is fully coated with the spices, pumpkin puree, coconut oil, and honey or maple syrup. 


Now, put your granola mixture onto your baking tray and spread out, until it is in an even layer. 


Bake for 25-30 minutes. After about 15 minutes remove the granola from the oven and toss it around. Put it back in the oven and bake the remaining of the time.  Once finished baking remove it from the oven and place the tray on your countertop, allowing it to cool off.
