Serves: 5 People People | 15 minutes- prep time | 0 minutes cooking time | 15 minutes- total time
5 large pita loaves
4 cups romaine lettuce, chopped 1 cup cherry tomatoes, sliced
1 1/2 cups cucumbers, sliced
2 cups shredded chicken
1 cup shaved parmesan cheese
Caesar Dressing Ingredients:
1⁄2 cup tahini
2 lemon, juiced
1⁄4 cup cup olive oil
2 tablespoons water
1 tablespoon Worcestershire sauce 1 tablespoon garlic, chopped
1 teaspoon Dijon mustard
1 teaspoon ground black pepper
Place the pita loaves onto a cutting board and slice off 1-inch off of the tops. After slicing the tops off, open up the pitas, so that they’re able to be stuffed.
In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumbers, chicken, and the parmesan cheese.
In a separate bowl, whisk all of the ingredients for the dressing together, until everything is well combined.
Now, pour the dressing over the salad and toss until the salad is evenly coated.
Finally, stuff the pitas with the salad and serve immediately.
**Note: If you are using this recipe to meal prep for the week, serve the sauce on the side, and leave the cherry tomatoes whole. Also, be sure to serve the salad on the side, and stuff the pita right before eating.
