Lemon Orzo Soup

Serves 10 people  | 15 minutes- prep time | 50 minutes- cook time | 1 hour and 5 minutes- total time 


2 tablespoons olive oil 

1 small onion, diced 

1 cup carrots, sliced 

3 cups asparagus, diced

3 cloves garlic, minced 

3 lemons, juiced 

8 cups vegetable broth 

1/2 teaspoon dried mint 

2 dried bay leaves 

3/4 cup orzo, uncooked

salt and pepper 



In a large pot add in the olive oil and heat over medium heat. 


Now, add the onions, carrots, and asparagus into the pot. Saute together the vegetables for five minutes or until  the onions become translucent. Then in the garlic and continue to saute for another minute. 


Now, add the lemon juice, broth, mint, bay leaves, orzo, salt, and pepper.  Finally, reduce the heat down to low and cover with a lid. 


Simmer for 45 minutes or until the vegetables are tender and the orzo is fully cooked.
