I’ve said it before, and I’ll say it again... I am not a big fan of salads TBH. Though, I am constantly trying to create salads that are packed with flavor and takes a quick second to prepare. My Quinoa Salad does just that (and I’m obsessed with it)!
1 cup uncooked quinoa, rinsed
1 3/4 cups water
1/2 teaspoon salt
2 cups sliced cucumbers
1 cup sliced tomatoes
1 cup corn kernels
1 cup broccoli slaw
3 limes, juiced
2-3 tablespoons olive oil

Directions: In a medium pot, add in the quinoa, water, and salt. Place onto the stove, over medium heat, and bring to a boil. Cover with a lid, reduce the heat to low, and cook for additional 15 minutes, or until the is no water remaining. Once finished cooking, remove from heat and allow it to sit, with the lid on for an additional 5 minutes, then fluff the quinoa with a fork.
In a large mixing bowl, add in the lime juice, olive oil, and BOLD Saturday Morning Spice Blend. Toss together with the cucumbers, tomatoes, corn, and broccoli slaw. Season with salt and pepper.
Toss the quinoa with the vegetables and chill for at least 30 minutes.
**Remains fresh in a covered bowl, in a fridge for up to 7 days.
