Hot Chocolate Brownie Cookies

What to do on a chilly Friday morning..? BAKE!! I always say that I’m not the best baker and this is not going to be the post where I deny that completely, though I will say that I’m getting better and better, every day.

I partnered up with @thebutterbook to show all of the non-bakers and pro-bakers the endless possibilities that can happen when you have a virtual sidekick/ know it all assistant!

I made these Hot Chocolate & Peppermint Brownie Cookies with the help of @thebutterbook various instructional videos and I must say, I definitely stepped my cookie game UP.


¾ cup unsalted softened butter (1 ½ sticks)

¾ cup brown sugar

2 eggs

2 teaspoon vanilla extract

1 ¼ cups all-purpose flour

½ cup cocoa powder

½ cup crushed peppermint candy

½ teaspoon salt

¾ teaspoon baking soda

¼ teaspoon baking powder

Large marshmallows, for topping


In a large bowl or stand mixer, cream butter and sugar until fluffy. Then, add in the eggs and vanilla extract.

In a separate bowl, mix the flour, cocoa powder, crushed peppermint candy, salt, baking soda, and baking powder.

Slowly add the dry ingredients with the wet and mix until all is well combined.

Wrap the dough in plastic and refrigerate for at least 30 minutes.

Preheat the oven to 350 degrees F.

Once the dough has been refrigerated, scoop the dough onto an ungreased baking sheet, being sure to keep at least ½ inch in between each cookie.

Bake for 8-10 minutes.

Once the cookies are finished baking, place one marshmallow on top of each cookie and place it under the broiler for 30- 60 seconds. Top with additional crushed peppermint candy.

Allow cooling for at least 10 mins.
