Prep Time: 10 minutes
Cook Time: 15 minutes
2 teaspoon olive oil, divided
1 large tomato, sliced
2 eggs, scrambled
1/2 cup caesar dressing, divided
1 tablespoon butter, melted
1 garlic clove (about 1 teaspoon), minced
1/2 focaccia loaf (use the other half for a simple sandwich or delicious croutons)
2 tablespoons grated parmesan cheese
2 tablespoons grated provolone cheese
1/4 cup pearl mozzarella, sliced in half (optional)
1/2 ounce arugula (2 small handfuls)
2-4 torn basil leaves
Kosher salt and ground black pepper
Place a large skillet over high heat and add 1 teaspoon of olive oil. Place the tomatoes in and cook on each side for 2 to 3 minutes, or until they are charred on each side.
Place a large skillet over medium heat and add in the rest of the olive oil. Pour in the scrambled eggs and cook. Use a rubber spatula to push the runny eggs to the center of the pan. Continue to cook for 2-3 minutes or until the eggs are of your personal liking.
In a small bowl, combine 6 tablespoons of caesar dressing, melted butter, garlic, and ground black pepper.
Spread the caesar sauce on the focaccia and top with the parmesan, provolone, and mozzarella. Place in the oven and broil on high for 2 to 3 minutes or until golden brown,
Top with scrambled eggs, charred tomatoes, arugula, and drizzle on the remaining caesar dressing on top.
Slice into 4 slices and serve.
