Brown Sugar Cornish Hens & Corn Bread Dressing

One thing about me, the Corn Bread Dressing and (Juicy) Turkey MUST be the star of my Thanksgiving plate!
For Day 5 of our Thanksgiving Countdown, I’m switching things up and making my Brown Sugar Cornish Hens with my go-to Corn Bread Dressing Recipe (I’m never straying away from this recipe 😅
Brown Sugar Cornish Hens:
SERVES 2-4
Ingredients:
2 Cornish Hens, giblets removed
2 tablespoons chopped assorted herbs (sage, rosemary, and thyme)
2 tablespoons butter
2 tablespoons brown sugar
1 tablespoon BOLD Saturday Morning Spice Blend
2 teaspoons paprika
1 teaspoon granulated garlic
1 tablespoon Kosher salt
Directions:
1. Preheat oven to 425 degrees F.
2. Place butter and chopped herbs into a small bowl and heat in the microwave until melted.
3. In a separate bowl, mix the brown sugar, paprika, granulated garlic, and kosher salt.
4. Using a few pieces of paper towel, pat the outside and inside of the cornish hens dry.
5. Sprinkle the spice mix onto the cornish hen's skin and cavity. Place into a baking dish or roasting pan.
6. Drizzle melted butter and herbs over the cornish hens and roast, uncovered for 45- 50minutes or until the thickest part of the breast reads 165F on a thermometer.
7. Remove from the oven and rest for 15-20 minutes before cutting in.
Cornbread Dressing:
SERVES 4
Ingredients:
1 box Jiffy Cornbread, baked according to the box directions (thank my Mom for this...)
2 tablespoons olive oil
1/2 yellow onion, diced
1/2 bell pepper, diced
1 tablespoon roughly chopped garlic
2 tablespoons chopped assorted herbs (sage, rosemary, and thyme)
2 tablespoons butter, melted
1 teaspoon ground sage (optional)
1 teaspoon celery salt (optional)
1 1/2 cups chicken broth
Kosher salt and ground black pepper
Directions:
1. Preheat oven to 425 degrees F.
2. Place a large skillet onto the stove, over medium heat, and add olive oil. Add in the chopped onions, bell peppers, garlic, and herbs. Cook for 8-10 minutes.
3. In a large bowl, combine the baked cornbread, cooked veggies, melted butter, ground sage, celery salt, broth, kosher salt, and ground black pepper.
4. Place into a baking dish and bake 30 minutes.
