I am starting my weekend breakfast off by putting a twist on a highly favored Vietnamese classic, the Bánh mì!
My Breakfast Bánh mì is compromised of a few staple ingredients, but I’m taking things further by adding hoisin glazed bacon, a fried egg, and tons of avocado!
Here’s the recipe if you’re feeling a bit adventurous for your weekend breakfast 🇻🇳🍳
4-6 bacon slices
2 tablespoons hoisin sauce
12-inch baguette, sliced in half lengthwise
4 tablespoons mayo
Shredded purple cabbage
Cucumber shaved or thinly sliced
Thinly sliced radishes
1 tablespoon rice wine vinegar
1 avocado, sliced
Kosher salt and ground black pepper
1. Cook bacon until crispy, glaze with hoisin sauce during the last 1-2 minutes of cooking.
2️. Fry eggs in bacon fat.
3️. Toss together vegetables with salt, pepper, and rice wine vinegar. Season avocado with salt and pepper.
4. Assemble sandwiches with seasoned vegetables, hoisin glazed bacon, and fried egg.
