Grilled Shrimp Slaw with Avocado Dressing

Whenever I eat a salad, I feel like an adult, maybe it’s because when I was younger I wanted no parts with a salad in any regard. Although, now give me a nice big bowl of leafy greens, a beautiful dressing, and some fresh vegetables and it’s game on! Whenever I make salad now, I always try to find a way to bring on the most flavor with minimum ingredients and time and this recipe is just that. I mean juicy shrimp meets a creamy avocado dressing, you can't go wrong!

Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
For the Slaw:
3 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons rice wine vinegar
2 teaspoons kosher salt
9 oz. shredded cabbage and carrot mix
¼ cup chopped cilantro
1 pound cooked shrimp
For the Dressing:
1 avocado, quartered
2 tablespoons lemon juice
¼ cup chopped chives
¼ cup chopped cilantro
2 teaspoons kosher salt
1 tablespoon olive oil
2 tablespoons cold water
Instructions:
In a large bowl, whisk together the olive oil, lemon juice, rice wine vinegar, and kosher salt. Toss in the shredded cabbage and carrots, cilantro, and cooked shrimp.
In a blender, combine together the avocado, lemon juice, chives, cilantro, kosher salt, olive oil, and cold water. Blend until smooth.
Drizzle the dressing onto the slaw.
