2 chicken breast, sliced in half
Salt and pepper
1 tablespoon Italian seasoning blend
2 teaspoons garlic, minced
2 cups cherry tomatoes
¼ cup basil leaves, chopped
¼ cup chicken or vegetable broth
Preheat oven to 425 degrees F.
Place a sheet of parchment paper onto a baking sheet tray.
Place the chicken onto the sheet tray and season both sides of the chicken with salt, pepper, and Italian seasoning blend.
In a small bowl, combine together the minced garlic, cherry tomatoes, and chopped basil.
Place the tomato mixture on top of the chicken breast and pour the broth over the chicken breast.
Bake for 25 minutes or until the chicken is fully cooked at 165 degrees F.
Serve with roasted vegetables or cooked pasta and red sauce.
