1 tablespoon olive oil
Salt and pepper
2 large jalapenos, diced
1 16-oz. jar roasted red pepper, diced
1 9-oz. bag frozen spinach, thawed
2 cups half and half
4 cups low fat Monterey Jack cheese, shredded
2 cups center cut pork bacon or turkey bacon, cooked and chopped
Preheat the oven to 400 degrees F.
Place a large saute pan on the stove and heat over medium heat. Add in the olive oil. Saute the jalapenos, roasted red peppers, and spinach for five minutes.
Season with salt and pepper. Add in the half and half and continue to cook for two minutes or until it comes to a simmer.
Stir in 3 cups of cheese and cook for two additional minutes or until the cheese melts into the sauce.
Stir in 1 ½ cups of chopped bacon and top off with the additional cup of cheese and place into the oven. Bake uncovered for 20-25 minutes or until golden brown.
Remove from the oven and top off with the additional bacon and garnish with green onions or parsley (optional).
Serve with toasted baguette slices, crackers, or crudites.
