1 large acorn squash
3 cups baby kale
¼ cup pepitas (pumpkin seeds)
1 red apple, thinly sliced
½ cup goat cheese, crumbled
2 teaspoons BOLD Backyard Barbecue Spice Blend
1 tablespoons olive oil
¼ cup water
Cut the acorn in half vertically and remove all of the seeds. Now, cut vertically each notch of the squash. Using a vegetable peeler, remove the skin then cut into 1-inch pieces.
Place a large skillet with olive oil, onto the stove, over medium heat. Once the pan is heated, add the squash, season with BOLD Backyard Barbecue Spice and cook for 10 minutes. Add the water into the skillet. Cook and cover for 5 minutes.,
Add in the kale and pepitas and cook for an additional minute. Serve and top with apples and goat cheese.
